Rainbow Wedding Cupcakes

Good morning everyone :)!

This week has been full of excitement. On Monday I had a big task of baking over 100 cupcakes ready for my cousins wedding on Tuesday and was extremely pleased with how they turned out that I thought it'd be nice to share them with you today. Colour coded of course, the yellow are lemon, orange are orange infused and the rest are yummy buttercream. The wedding took place on the East Coast which is full of lively coloure beach huts, hence the inspiration for multi coloured cupcakes.

Dairy Free Blackberry and Lemon Cupcakes


I have been so busy lately but seem to have nothing to show for it. My mother went out the other day to pick some blackberries whilst hinting that my dad had nothing sweet to take into work. So there I was yesterday trying to think of what to bake and was oblivious to this huge tub of blackberries in the corner of the kitchen just staring at me. I am not a strong fan of blackberries and the thought of blackberry butter cream makes me feel sick slightly. Despite this I decide to use them and mix it with some lemon to add some more tang. Surprisingly they taste so good but I just wish I note down how much I add of each ingredient. This can be by goal this summer! 

Some of the extra ingredients:
  • 1 Lemon for lemon juice in the cake batter and frosting
  • and lemon zest inside the cake 
  • Spoonful of lemon curd
  • A couple of handfuls of blackberries

The center of the cupcakes are filled with mushed up blackberries mixed with lemon curd! Sounds odd but it just works, trust me! 

Here it goes..

What you'll need

3 eggs (measure.. mine were approx 207g.)
207 grams of
Self Raising Flour
Caster Sugar
Pure Sunflower Margarine
---
1 Lemon (maybe 2)
Tbsp Lemon Curd 
Couple of handfuls of Blackberries
Stork Butter Block
Icing Sugar

Pre heat fan oven to 180 C and line 12 muffin cases. 

Cupcakes

  1. Mix the butter and sugar together until smooth and pale
  2. Beat in one egg at a time 
  3. Cut half the lemon and squeeze the juice to the mix (to taste)
  4. Slowly sift in the flour, using a wooden spoon mix with a figure of 8
  5. Add the zest of 1 lemon


Fill muffin cases and bake for approx 20-25 minutes until spongy on top and a toothpick comes out clean!

Filling

  1. Mush a couple of handful of blackberries using a fork
  2. Add a tbsp of lemon curd and mix


Once the cupcakes are cooled scoop out the centers and fill. Replace the cake back on top

Lemon Butter Cream

  1. Whisk the block of Stork butter
  2. Slowly add icing sugar using a wooden spoon. You'll probably use half of a small box
  3. Squeeze some lemon juice until to taste
  4. Add a tiny amount of yellow food gel

Use your favourite piping nozzle to pipe and decorate using the extra compote or with a blackberry!

River Island Summer Nights & Bikini


How beautiful are these!? I walked into River Island to get a bikini (will come to that in a bit) and saw all these beautiful items. Unfortunately all my work money is currently going into my Thailand saving's so maybe when I come back these will all be in sale (wishful thinking Kat). 

Floral print trousers are my fav during summer nights! So pretty and elegant yet warm enough for the chilly nights. Found here for £40!
In addition white jeans/jeggins are so flattering, especially with a tan.. these are the white Molly jeggings which would look lovely with a plain cami and some gorgeous wedges! 

Onto the bikinis... now I had my eye on one for a while but they never had my size. If you have heard of Triangl then you would understand how happy I was when I saw River Island stock a bikini look alike and  with it fitting perfectly! 


I bought the light green textured bustier bikini from River Island (middle one) which comes in at £28 for the set and can be found here! They used to stock it in pink so may have them in store but these two are also some lovely bikinis that are currently in the stores.

Statement Necklace for Spring/Summer

I've never really been into my necklaces but decided that if I bought one that I adored I would hopefully wear it with everything!
I went into Outfit the other day and found this lovely statement necklace, with hints of bright pinks, corals and grays I find it the perfect spring time necklace and have worn it with almost every outfit this week! 
I think I found it in Dorothy Perkins... but I can't find it on the website so maybe it wasn't.

Where has the time gone?!

Today has been one of those days where you sit and do absolutely nothing yet the time seems to fly by, this little saying is my inspiration for today's post which has no relevance to cupcakes whatsover. 

I found my old blog today and reading it made me realize how much time has flown by, it only feels like yesterday when I found out I got a place at UEA and now I have one year left to make the most of being a uni student! 
I started a blog in my first year where I posted photos I had taken every few days or so with a description of the day to remind me of days that I probably would have forgotten about otherwise, reading it back today brought back so many memories and I have realized how much I want to carry it on. 

I have no idea who actually reads this blog, or if anyone does but this is not only going to be dedicated to my love for baking cupcakes but will also include the odd posts about days I don't want to forget or random thoughts here and there! 

So whilst I'am here I will dedicate this post to the end of Summer and the beginning of my 3rd and final year at University (ek...).
The Summer holidays began with an amazing week at Tenerife with my best girls, I can safely say that the holiday is the cause of me having the biggest holiday blues I have ever had! Then straight after I made my way round Italy and Croatia on a cruise with the family on board the Celebrity Silhouette. I can not explain to you how amazing the boat was and how much I miss looking out of my balcony to see the different views each morning!

Other than the two holidays my summer holidays haven't been all that exciting this year. I have a job as a bar girl, I went to my first ever wedding and have pretty much just been baking and spending most of the time with my girls at home.
A little message goes out to my brother who I haven't seen or heard properly in what it feels like a year as he is having the time of his life travailing South Africa and now Australia. I feel like an only child at the moment and I really am not enjoying it but hey ho, as long as he is having a good time that's all that matters! 


So I think I have rambled on enough, I hope everyone has made the most of Summer 2013, Christmas isn't far away and Summer 2014 will come round quicker than you think. 

Keep smiling and enjoy the last few weeks of the holidays!
